Ingredients

  • 2 cups potato mashed
  • 1 egg large
  • 5 tablespoons all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup yellow onion minced
  • 3/4 cup cheddar cheese shredded
  • 1/2 teaspoon baking powder
  • 2 tablespoons chives minced (plus more for garnish)
  • avocado oil about 1/2 cup, for frying, or vegetable oil of choice
  • sour cream for serving

Instructions

  1. In a medium bowl, mix together the mashed potatoes, egg, flour, salt, pepper, yellow onion, cheese, baking powder, and chives until well combined.
  2. Heat oil in a large skillet over medium heat. Scoop about 1/4 cup of the pancake mixture per pancake into the skillet, and flatten slightly.
  3. Fry each side for 3-4 minutes until golden brown and crispy. Transfer to a wire rack to cool and drain.
  4. Serve the pancakes topped with additional chives and a dollop of sour cream.
