Ingredients

  • 3 pounds sweet potato
  • 1/4 cup unsalted butter melted, or ghee
  • 1/4 cup milk or dairy-free alternative
  • kosher salt to taste
  • black pepper to taste, freshly ground
  • parsley for garnish, optional, finely chopped

Instructions

  1. Peel the sweet potatoes and cut them into 1-inch to 1 1/2-inch chunks.
  2. Boil the sweet potato chunks in a large pot of water until fork-tender, about 20 to 30 minutes, then drain.
  3. Mash the cooked sweet potatoes in a large bowl using a hand masher or electric mixer.
  4. Stir in the melted butter and milk, and season with salt and pepper to taste, mixing until creamy.
  5. Serve the mashed sweet potatoes garnished with optional chopped parsley.
