Mashed Sweet Potatoes

Ingredients

  • 3 pounds sweet potatoes about 5 large or 6 medium, peeled and cut into 1-inch cubes
  • 4 tablespoons unsalted butter cut into pats, plus more for serving
  • ½ cup milk warmed
  • ¼ cup maple syrup
  • 1 teaspoon sea salt plus more for cooking the potatoes
  • freshly ground black pepper
  • fresh thyme leaves optional, for garnish

  1. Place the sweet potatoes in a large pot and cover with cold water by 1 inch. Stir 1 tablespoon salt into the water.
  2. Bring to a boil over high heat, then reduce the heat to maintain a gentle boil. Cook for 10 to 15 minutes, or until the potatoes are easily pierced with a fork.
  3. Drain the potatoes and return to the pot. Add the butter, milk, maple syrup, salt, and several grinds of pepper. Use a potato masher to mash until smooth and well combined.
  4. Season to taste and serve topped with more butter and fresh thyme leaves, if desired.
