Mast-o-Khiar

Ingredients

  • 4 Persian or Lebanese cucumbers (Beith Alpha or 2 classic cucumbers)
  • 2 cups thick plain yogurt (Greek yogurt type)
  • 3 oz. raisins , optional
  • 4 walnut kernels , optional, toasted
  • 1 teaspoon garlic powder , optional
  • 4 fresh mint leaves , finely chopped
  • 1 tablespoon dried mint leaves
  • salt
  • pepper
  • A few dried rose petals , optional

Instructions

  1. Peel and seed the cucumbers and grate them or cut them into very small cubes (according to taste) then place them in a colander and let them drain for 30 minutes.
  2. In a bowl, add the yogurt, then add the raisins (optional), garlic powder (optional), dried mint and fresh mint.
  3. Squeeze the cucumbers with the hands to drain them completely and add them to the yogurt.
  4. Season with salt and pepper and stir for 2 minutes to fully diffuse all the flavors.
  5. Place the mast-o khiar in the refrigerator for at least 1h30.
  6. To serve, optionally decorate the mast-o khiar with dried rose petals and walnuts and enjoy with barbari, lavash, or pita bread.
