Max & Erma's Tortilla Soup (Creamy Chicken Tortilla Soup)

This creamy chicken tortilla soup is the perfect copycat recipe for the famous Max & Erma's tortilla soup! Made with rotisserie chicken, tomatoes, cheese, and lots of spices.

Ingredients

  • ¼ cup butter unsalted
  • ¼ cup all-purpose flour
  • 3 cups chicken stock
  • 1 cup milk whole
  • 2 cups chicken shredded
  • 10 ounces Velveeta cheese
  • 1 (10 ounce) can Rotel diced tomatoes with green chilies
  • 1 teaspoon chili powder
  • ½ teaspoon cumin ground
  • ¼ teaspoon oregano dried
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon kosher salt

Instructions

  1. In your 5.5 quart soup pot add your butter and place over medium-high heat.
  2. When your butter is melted add the flour and whisk together until combined and froathy.
  3. Slowly pour in your chicken stock and whisk to combine. You should see no lumps of flour.
  4. Pour in your milk and stir to combine.
  5. Turn your heat down to medium-low and add in your shredded chicken, Velveeta cheese, Rotel diced tomatoes, chili powder, cumin, oregano, smoked paprika and kosher salt. Stir to combine.
  6. Gently simmer and stir to help melt the Velveeta cheese.
  7. Once melted, let the soup simmer for about 20 minutes or until creamy and thick. Don't let the soup boil or scorch. Stir it frequently.
  8. To serve, pour in a bowl and top with your desired toppings, such as tortilla strips, avocado, sour cream, or shredded cheese.
