Mayo-Free Coleslaw
This Mayo-Free Coleslaw blends green and red cabbage, grated carrot, and chopped green onions with a zesty dressing made from avocado oil, lemon juice or rice vinegar, garlic, and herbs. Without mayonnaise, it offers a light, tangy slaw that retains crunch and vibrant flavors, making it a refreshing side for barbecues, sandwiches, or casual meals.
Ingredients
Coleslaw:
- 4 cups green cabbage thinly sliced
- 1 cup red cabbage thinly sliced
- 1 cup carrot grated
- 5 green onions chopped
- ½ cup almonds optional, sliced or chopped raw
For the Mayo-Free Coleslaw Dressing:
- ⅓ cup avocado oil
- ⅓ cup lemon juice or rice vinegar
- 1 Tbsp pure maple syrup optional
- 1 clove garlic minced
- ½ tsp onion powder
- ½ tsp oregano dried
- ½ tsp parsley dried
- ¼ tsp black pepper
- ½ tsp salt to taste, sea salt
Instructions
- How to Make Coleslaw Dressing: Add the ingredients for the dressing to a bowl (or blend in a small blender) and whisk very well until combined. Refrigerate until ready to use. Note: the dressing itself becomes even more flavorful over time, so feel free to make it a few days in advance!
- Thinly slice the cabbage, grate the carrots, and chop the green onion and add everything to a mixing bowl.
- Pour in all of the dressing and toss until everything is well coated. Taste for flavor and add more sea salt, and/or lemon juice to taste.
