Ingredients
- 1 lb ground turkey
- 1 egg
- 1 tbsp garlic parley salt
- 1 tbsp oil
- 1/2 medium onion diced
- 1 medium carrot chopped
- 3 medium potatoes chopped
- 1 bn Fresh Kale chopped
- 7 cups water or chicken/beef broth
- 1 tbsp salt adjust to taste
- 1 tsp pepper adjsut to taste
Instructions
- Prepare ingredients. Clean and dice potatoes into bite-sized pieces. Chop kale into one-inch long strips.
- Dice onion and carrot into similar sized pieces. Preheat oiled pot over medium-heat with olive oil. Sautee onions and carrots until they soften and the onions turn translucent.
- Add water or broth to the the pot. Bring to a simmer.
- Combine meat with egg and garlic salt.
- Form meatballs by rolling the meat mixture into a ball in the palm of your hand. Add one at a time to the boiling water. Let soup simmer for 15 minutes.
- Add diced potatoes to the simmering ingredients. Once they are fully cooked (about 15 minutes), add in the kale strips.
- Season to taste with salt and pepper. Serve soup while it is warm.
