Meatball Kale Soup Recipe

Everyone needs an easy Meatball Kale Soup recipe in their back pocket. This particular recipe is perfect for a hectic weeknight when you want a homecooked meal with little fuss.

Ingredients

  • 1 lb ground turkey
  • 1 egg
  • 1 tbsp garlic parley salt
  • 1 tbsp oil
  • 1/2 medium onion diced
  • 1 medium carrot chopped
  • 3 medium potatoes chopped
  • 1 bn Fresh Kale chopped
  • 7 cups water or chicken/beef broth
  • 1 tbsp salt adjust to taste
  • 1 tsp pepper adjsut to taste

Instructions

  1. Prepare ingredients. Clean and dice potatoes into bite-sized pieces. Chop kale into one-inch long strips.
  2. Dice onion and carrot into similar sized pieces. Preheat oiled pot over medium-heat with olive oil. Sautee onions and carrots until they soften and the onions turn translucent.
  3. Add water or broth to the the pot. Bring to a simmer.
  4. Combine meat with egg and garlic salt.
  5. Form meatballs by rolling the meat mixture into a ball in the palm of your hand. Add one at a time to the boiling water. Let soup simmer for 15 minutes.
  6. Add diced potatoes to the simmering ingredients. Once they are fully cooked (about 15 minutes), add in the kale strips.
  7. Season to taste with salt and pepper. Serve soup while it is warm.
