Meatloaf Cupcakes with Mashed Potato Frosting

A fun April Fool's Day Dinner Idea where nothing is quite as it seems. Meatloaf cupcakes, apple fries, and Cocoa Krispies mock meatloaf.

Ingredients

  • 1 recipe meatloaf
  • 1 recipe mashed potatoes

Instructions

    Cup of Yum
  1. Preheat oven to 350 degrees. Lightly grease a muffin tin.
  2. Make your meatloaf mixture. You can use any recipe or check out my favorite recipe above.
  3. Make everything except the glaze.
  4. Form meatloaf into large meatballs that fill the muffin tin holes. Bake in the preheated oven for 35 to 40 minutes. Once baked, remove from muffin tin and place in cupcake liners.
  5. Meanwhile, make a batch of
  6. mashed potatoes
  7. Transfer mashed potatoes to a pastry bag with a star tip.
  8. Frost "cupcakes" with mashed potatoes.
