Ingredients

  • ¼ cup olive oil
  • 2 pounds russet potato small dice
  • 1 cup onion diced
  • 1 red bell pepper diced
  • 5 garlic minced, cloves
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 lices meatloaf cubed, leftover
  • 4 egg

Instructions

    Cup of Yum
  1. Add the olive oil to a large skillet on the stove over medium-high heat.
  2. Once the oil is heated, add the potatoes, onion, bell pepper and garlic.
  3. Sprinkle the salt and pepper over the hash and cook for 20 minutes, stirring every 3-4 minutes.
  4. Add the diced meatloaf and cook for an additional 5 minutes.
  5. Crack the eggs into the skillet on top of the hash. Cover the skillet and allow the eggs to cook for 4-6 minutes.
  6. Remove the lid and serve immediately.
