Medical Medium style fatfree cream of mushroom soup with chaga

A twist on the classic French cream of mushroom soup, designed for the Medical Medium protocol: glutenfree, dairyfree and vegan.

Ingredients

  • 4 to 5 cups chestnut mushrooms (450 grams)
  • 1 tbsp coconut aminos
  • 1 eggplant
  • sea salt to taste, Celtic variety
  • 1 cup potato
  • extra virgin olive oil for baking
  • 2 cup broth or vegetable broth, MM healing
  • fresh herbs for garnish
  • extra extra water if needed
  • 2 tablespoons maple syrup
  • 2 tablespoons Chaga powder
  • 2 teaspoons paprika powder
  • ½ to 1 tsp cayenne pepper or chili pepper
  • 1 tsp oregano dried
  • 1 tsp thyme dried
  • 1 tsp rosemary dried
  • 1 tsp sage dried
  • ¼ teaspoons black pepper

Instructions

  1. Peel and cut the potatoes in small cubes. Wash and cut the eggplant in the same sized cubes. Place in the pan.
  2. Add the broth, the Chaga, paprika, chili, black pepper, herbs and the maple syrup. Bring to the boil.
  3. Let the vegetables cook for 15 minutes. Then blend with the immersion blender.
  4. In the meantime: cut the onion very fine. Bake in the non-stick pan until translucent. For Medical Medium preferably with just some drops of water.
  5. Press the garlic and add to the onions.
  6. Cut the mushrooms just a little thicker than what you prefer when eating them. They will shrink a bit while baking. Add to the onions and bake until brown on both sides.
  7. Add the onions and mushrooms to the soup. Add the liquid from the mushrooms as well or save to use as garnish.
  8. Taste. Add coconut amino's or salt if you feel it's necessary. But for Medical Medium try to keep it low.
  9. If necessary add some extra water to thin the soup.
  10. Pour into two plates. Garnish with some fresh herbs. Drizzle some coconut amino's or the mushroom 'juice' on top.
