Mediterranean Cauliflower Rice

Ingredients

  • 10 oz frozen spinach, cooked according to package directions
  • 12 oz frozen cauliflower rice, cooked according to package directions
  • ⅓ cup feta cheese
  • 1 lemon, juiced
  • 1 Tablespoon butter
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon dried dill

Instructions

  1. Preheat oven to 425 degrees F.
  2. Place the cooked spinach in a kitchen towel and squeeze out of the excess moisture.
  3. Add the squeezed spinach, cooked cauliflower rice, feta cheese, lemon juice, butter, salt, pepper and dill to a small greased casserole dish.
  4. Give everything a good stir to combine, then bake at 350 for 20 minutes. (Rather than baking you could simply microwave this until the butter is melted and the cheese is warm, about 3-5 minutes.)
  5. After baking, give everything one final stir and serve.

Notes

  • Hint: This dish can be prepped ahead without baking, then covered and refrigerated for up to 3 days and baked just prior to serving.
