Mediterranean Cauliflower Rice
This delicious Mediterranean Cauliflower Rice embodies bright Mediterranean flavors in an easy and nutritous side dish that pairs well with a variety of meals.
Ingredients
- 10 oz spinach frozen; cooked according to package directions
- 12 oz cauliflower rice frozen; cooked according to package directions
- ⅓ cup feta cheese
- 1 lemon juiced
- 1 Tablespoon butter
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon dill dried
Instructions
- Preheat oven to 425 degrees F.
- Place the cooked spinach in a kitchen towel and squeeze out of the excess moisture.
- Add the squeezed spinach, cooked cauliflower rice, feta cheese, lemon juice, butter, salt, pepper and dill to a small greased casserole dish.
- Give everything a good stir to combine, then bake at 350 for 20 minutes. (Rather than baking you could simply microwave this until the butter is melted and the cheese is warm, about 3-5 minutes.)
- After baking, give everything one final stir and serve.
Notes
- Hint: This dish can be prepped ahead without baking, then covered and refrigerated for up to 3 days and baked just prior to serving.
