Ingredients

  • 2 (15-ounce cans) chickpeas drained and rinsed
  • 1 cucumber diced, large
  • 1 red bell pepper diced
  • 2 cups cherry tomato halved
  • ¼ cup red onion diced
  • 4 ounces feta cheese crumbled
  • ¼ cup parsley finely chopped
  • lemon vinaigrette you can use as much or as little as you'd like
