Mediterranean Dip
This Mediterranean Dip is filled with fresh and creamy flavors and is quite healthy too! Eat with pita chips and/or veggies.
Ingredients
- 2 cups yogurt plain, Greek
- salt to taste
- black pepper to taste
- 1 cup black olives or kalamata olives if your kids don't object, chopped
- 1 roasted red pepper chopped
- 1 cup feta cheese low fat, crumbled
- 1/2 cup parsley chopped
- lemon juice and zest of 1
- 2 tablespoons olive oil
- Pita chips for serving
Instructions
- Spread plain greek yogurt over a shallow serving platter or dish. Sprinkle with salt and pepper and using the back of a spoon, swirl seasonings into yogurt.
- Top with olives, chopped roasted red peppers, feta cheese and parsley. Squeeze lemon juice over entire thing.
- Sprinkle with lemon zest, drizzle with olive oil and top with more salt and pepper. Serve along side pita chips.
