Ingredients

Greek Salad
  • 2 tomato cut into 1-inch pieces, large
  • 1 red bell pepper cut into 1-inch pieces
  • 1 English cucumber quartered lengthwise and chopped into 1/2-inch pieces, or 2 medium garden cucumbers
  • 1 red onion thinly sliced, medium
  • ½ cup black olives halved lengthwise, pitted
  • ½ cup feta cheese cubed, Greek
  • 2 Tablespoon parsley chopped, fresh
Greek Salad Dressing
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • ½ teaspoon black pepper
  • ¼ cup extra virgin olive oil
  • 2 Tablespoon red wine vinegar

Instructions

  1. Place the tomatoes, bell pepper, cucumber, red onion, olives, and parsley in a salad bowl and toss gently to combine.
  2. Combine the salt, black pepper, olive oil, vinegar, oregano, in a small bowl, and mix.

  4. Add cubed feta cheese and serve.
