Ingredients

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup kalamata olives pitted and sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • salt and pepper to taste

Instructions

  1. Cook orzo pasta in boiling, salted water according to package instructions until al dente, then drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooled orzo with tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  3. Whisk together olive oil, lemon juice, oregano, salt, and pepper in a small bowl. Pour over the salad and toss to combine.
