Mediterranean Pinwheels
Mediterranean Pinwheels are made by spreading a flavorful cream cheese mixture enhanced with garlic, sun-dried tomatoes, basil, and reserved tomato oil onto large tortillas. Chopped spinach, additional sun-dried tomatoes, Parmesan, feta, and fresh basil are layered before rolling tightly and slicing into bite-sized pinwheels. The mix of creamy, tangy, and herbaceous flavors with the tender tortilla creates a versatile savory snack or appetizer.
Ingredients
- 6 large tortillas I like spinach flavor or sun-dried tomato but can use regular (see above notes
- 8 ounces cream cheese
- pinch salt
- pinch black pepper
- 2 TBS garlic fresh or pre-minced
- 6 ounces sun-dried tomatoes chopped and oil reserved, in oil
- 10-12 ounces spinach cooked, water squeezed out, chopped, frozen
- ¼ cup Parmesan Cheese grated
- ⅓ cup feta cheese crumbled
- 1 cup basil fresh leaves
