Ingredients
- 1 cup quinoa
- 2 cups water
- 1/2 cup extra virgin olive oil can use less -- 1/3 cup if so desired
- 1/4 cup red wine vinegar
- 2 Tablespoons fresh Italian parsley chopped
- 1 teaspoon garlic salt
- 1/2 teaspoon pepper
- 1 cucumber peeled and diced
- 1 1/2 cups grape tomatoes halved
- 1/3 cup red onion thinly sliced
- 3/4 - 1 cup feta cheese crumbled
- kalamata olives optional
Instructions
- Cook quinoa according to package instructions.
- In small bowl, toss extra virgin olive oil, vinegar, parsley, garlic salt, and pepper.
- Toss dressing with quinoa.
- Top with cucumber, tomatoes, red onion, and feta cheese.
- Salt to taste.
- Refrigerate for 30 minutes.
