Mediterranean Rice Pilaf Recipe

Rice pilaf is a quick, simple, flavorful dish made with tons of dried fruit, nuts, cheese, and herbs tossed with toasted orzo and rice.

Ingredients

  • 1 cup almonds
  • 1 tbsp olive oil
  • 1/2 cup orzo pasta
  • 1/2 cup basmati rice
  • 1 1/2 cups chicken stock (or water)
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 12 dried apricots chopped
  • 1/2 cup parsley chopped
  • 1/3 cup feta cheese crumbled
  • 1 lemon wedges for serving

  1. In a large skillet heat olive oil over medium heat and add almonds. Toast for 1 minute and add the orzo pasta. Toast both almonds and orzo, moving around pan until golden brown.
  2. Add the rice and chicken stock (or water), salt and pepper. Stir and bring to a boil, turn to low and cover. Simmer for 20 minutes.
  3. Remove lid and top pilaf with chopped apricots, parsley and feta cheese. Cover and let rest 10 minutes. Fluff pilaf, taste for seasoning and serve warm with slices of lemon.

Notes

  • For leftovers, let the rice cool completely and transfer to an airtight container or sealable bag and squeeze out excess air. Freeze for up to 2 months. To thaw, let come to room temp, add a tablespoon of water, cover and steam in microwave for 2-3 minutes on high heat. Fluff with fork and enjoy.
