Ingredients

  • 1 English cucumber halved and sliced
  • 3 Roma tomato chopped, large
  • 1/2 onion thinly sliced
  • 2 tablespoons parsley chopped, fresh
  • 2 tablespoons basil chopped, fresh
  • 3/4 cup kalamata olives halved
  • 4 1/2 ounces feta cheese crumbled
  • 3 tablespoons olive oil
  • 2 1/2 tablespoons red wine vinegar
  • 1 teaspoon oregano dried
  • 1/2 teaspoon kosher salt plus more to taste
  • black pepper freshly ground, to taste

Instructions

  1. In a large salad bowl, mix the cucumbers, tomatoes, onion, parsley, basil, and olives.
  2. Add the feta cheese, olive oil, red wine vinegar, oregano, salt, and pepper. Toss everything together to combine and serve immediately.
