Mediterranean Sheet Pan Nachos Recipe

Ingredients

  • 1 teaspoon olive oil
  • ½ yellow onion chopped
  • 4 mini sweet peppers thinly sliced
  • 2 garlic cloves minced
  • ½ teaspoon dried oregano
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground pepper
  • 1 (8 oz.) bag pita chips with sea salt
  • 2 ounces crumbled goat cheese
  • ½ cup quartered grape tomatoes
  • ½ cup chopped cucumber
  • 1 ounce (about 8) pitted kalamata olives quartered
  • 2 tablespoons minced flat leaf parsley
Hummus dressing:
  • 3 tablespoons hummus
  • 1 tablespoons fresh lemon juice
  • 1 teaspoon agave nectar
  • 1 teaspoon water
  • ¼ teaspoon dried oregano
  • ⅛ teaspoon kosher salt

Instructions

  1. Preheat the oven to 375 degrees F. Place the baking rack on the middle setting.
  2. Heat the olive oil in a medium nonstick skillet set over medium-high heat. Add the chopped onions. Cook, stirring occasionally, until the onions are soft and browned, 6 to 7 minutes.
  3. Add the peppers and cook for 2 minutes.
  4. Stir in the garlic, oregano, salt and pepper. Cook for 1 minute. Remove from heat.
  5. Spread the pita chips in a single layer, overlapping slightly, on a baking sheet. Sprinkle the goat cheese over top. Bake until the cheese is warm and soft, 5 to 7 minutes. Take care not to burn the pita chips.
  6. Remove the chips from the oven. Layer the cooked peppers and onions, tomatoes, cucumbers and olives over top.
  7. Drizzle with the hummus dressing. Garnish with parsley. Serve.
Hummus dressing:

  1. In a medium bowl, whisk together the hummus, lemon juice, agave nectar, water, oregano and salt.
