Mediterranean Style Breakfast Toast
Mediterranean Style Breakfast Toast combines classic Italian bread with a flavorful mixture of feta, mozzarella, eggs, red bell pepper, parsley, and kalamata olives, seasoned with oregano and Aleppo pepper. The topping is spread evenly over bread slices and baked until set, creating a golden, bubbly cheese surface with tender, seasoned vegetables inside. Nigella and sesame seeds add texture and a subtle nutty finish. This toast offers a savory and colorful breakfast or brunch option with Mediterranean flavors and a satisfying balance of creamy and crisp textures.
Ingredients
- 1 loaf Italian bread
- 1 cup feta cheese crumbled
- ½ cup mozzarella cheese shredded
- 2 egg
- 1 red bell pepper diced
- 2 tablespoons parsley chopped
- ½ cup kalamata olives sliced
- 1 teaspoon oregano
- ½ teaspoon kosher salt
- 1 teaspoon Aleppo pepper
- 1 tbsp sesame seeds
- 1 tbsp nigella seeds
Instructions
- Preheat your oven to 400°F (200°C). Slice the Italian bread into evenly sized pieces, about 1/2 inch thick. Arrange the slices in a single layer on a baking sheet.
- Combine crumbled feta, mozzarella, red pepper, parsley, and sliced kalamata olives in a bowl. Add the egg and then mix it into the cheese and vegetable mixture. Season with oregano, Aleppo pepper, and kosher salt to taste, and stir to combine.
- Evenly distribute the mixture on top of each slice of bread. Spread the mixture out to cover the bread slices completely. Sprinkle some nigella seeds and sesame seeds on top.
- Place the baking sheet in the preheated oven. Bake for 15 minutes, or until the cheese is melted and bubbly, the eggs are cooked through, and the bread is golden and crispy. Remove from the oven and let cool slightly before serving.
Notes
- Use bread sturdy enough to hold toppings, such as sourdough or French bread, as alternatives to Italian bread.
- Vegetable variations like sautéed spinach, leek, or cooked, seasoned potatoes offer flavorful alternatives.
- Store any leftovers in an airtight container in the refrigerator for up to 3 days for best freshness.
- Reheat leftovers in the oven or an air fryer to retain toast crispness and warm the toppings evenly.
