Mediterranean Tuna Salad Sandwich
The lunchtime classic gets a major upgrade with this Mediterranean Tuna Salad Sandwich made with kalamata olives, roasted red peppers, and fresh basil.
Ingredients
- 2 tuna drained, five ounce cans
- ⅓ cup red onion minced
- ¼ cup mayonnaise or plain Greek yogurt, real
- ¼ cup kalamata olives sliced, Mezzetta pitted Greek
- ¼ cup roasted red bell peppers Mezzetta brand
- 2 tablespoons lemon juice fresh
- 2 tablespoons basil or Italian parsley, fresh, minced
- 8 lices whole grain bread
- liced romaine lettuce Mezzetta Deli Sliced Pepper Rings and Roasted Red Bell Pepper, optional toppings
Instructions
- Place drained tuna in a medium bowl and add onion, mayonnaise, olives, roasted peppers, lemon juice and fresh basil. Stir with a fork until all ingredients are fully incorporated.
- Top four slices of bread with a lettuce leaf then add equal portions of tuna salad to each piece.
- Garnish with optional toppings then top with second slice of bread before slicing and serving.
Notes
- I love adding capers or lemon zest if I have them on hand or have the time!!
