Mediterranean Turkey Meatloaf
The Mediterranean Turkey Meatloaf blends lean ground turkey with savory ingredients including sautéed red onion, roasted red peppers, feta cheese, kalamata olives, and fresh herbs like dill and parsley. Seasoned with oregano and combined with egg and panko for structure, the meatloaf is baked until fully cooked and paired with a tzatziki sauce to further enhance its bright, herby flavors.
Ingredients
Meatloaf
- 1 tablespoon olive oil
- 1/2 cup red onion diced
- 1 teaspoon garlic grated or minced
- 1/2 cup roasted red peppers diced
- 1/3 cup feta cheese crumbled
- 1/4 cup kalamata olive chopped
- 1 tablespoon dill fresh, chopped
- 2 tablespoons flat leaf parsley chopped
- 2 teaspoons oregano dried
- black pepper fresh ground, to taste
- kosher salt fresh ground, to taste
- 1 egg
- 1/4 cup panko gluten free if needed
- 1 tablespoon milk
- 1 pound ground turkey 93/7% is best, lean
Tzatziki Sauce
Instructions
- Pre-heat the oven to 400° F. In a non-stick skillet over medium heat, sauté the onion in the olive oil until it starts to soften, about 2 minutes. Add in the garlic and sauté another 30 seconds. Dump the mixture into a large mixing bowl.
- Add the peppers, feta, olives, dill, parsley, oregano, egg, panko, milk, salt and pepper to the mixing bowl and whisk everything together. Add in the turkey and use your hand to combine the mixture being careful not to over-mix.
- Line a baking sheet with parchment paper or foil (spray the foil with cooking spray) and form the meat mixture into a loaf that is equally thick all the way around. Bake for 30-40 minutes or until a meat thermometer inserted into the middle reads 170° F. Let the meatloaf rest for 5-10 minutes before serving.
- In a medium sized bowl stir together all of the ingredients for the tzatziki sauce. Taste for for seasoning and serve with the meatloaf.
