Melting Potatoes are roasted in butter, chicken broth, thyme, and garlic until they are tender enough to just melt in your mouth!

Ingredients

  • 2 pounds potato ends trimmed and sliced 1 inch thick, Yukon gold variety
  • 4 tablespoons butter melted, unsalted
  • 1 teaspoon thyme dried
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper coarse ground
  • 2 garlic finely minced, cloves
  • 1 cup chicken broth

Instructions

    Cup of Yum
  1. Preheat oven to 450 degrees.
  2. Toss the potatoes in the mixture of butter, thyme, salt, pepper, and garlic.
  3. Add to a 9x13 baking dish and bake for 15 minutes. Flip and bake an additional 15 minutes.
  4. Flip potatoes a third time, add chicken broth, and bake for 10 minutes until broth is cooked off.
