Meringue Nests

Ingredients

  • 4 large egg whites at room temperature
  • 1/2 teaspoon cream of tartar
  • 1 cup granulated sugar
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 200°F and line a baking sheet with parchment paper.
  2. In a clean, dry mixing bowl, beat the egg whites until foamy. Add the cream of tartar and continue to beat until soft peaks form.
  3. Gradually add the sugar, 1 tablespoon at a time, while continuing to beat the mixture. Once all the sugar is added, beat until stiff peaks form and the meringue is glossy.
  4. Beat in the vanilla extract until just combined.
  5. Transfer the meringue to a piping bag fitted with a star tip. Pipe the meringue into small circles on the prepared baking sheet, building up the edges to form nests.
  6. Bake in the preheated oven for 2 hours, or until the meringues are crisp and dry. Turn off the oven and let the meringues cool completely inside, with the door slightly ajar.
  7. Once cooled, fill the meringue nests with your choice of filling before serving.
