Mesquite Grilled Pork Tacos

Ingredients

  • 1 1/2 pounds Smithfield Mesquite Pork Loin Filet
  • 2 ears corn on the cob
  • 16-20 corn tortillas
  • Taco toppings of your choice: shredded lettuce, cheddar cheese, lime juice, hot sauce, sour cream, etc.

Instructions

  1. Preheat the grill to 400 degrees.
  2. Slice the pork loin in half, lengthwise, to make the filet thinner so that it will cook quicker. Place both halves on the grill over direct heat.
  3. Shuck the corn and rinse. Wrap in foil and place on the grill. Cook for 15 minute, turning halfway through.
  4. Cook for 6-7 minutes and flip over. Continue cooking for 6-7 minutes or until a thermometer reads 145 degrees. Remove from the grill and let rest 5 minutes.
  5. While the pork is resting, place the tortillas on the grill and cook just until warm and pliable.
  6. Chop the pork into bite sized pieces.
  7. Slice the corn kernels off the cob.
  8. Add a spoonful of pork and corn to each tortilla and top with whatever taco toppings you prefer.
