Mexican Casserole
This Mexican Casserole layers cooked chicken combined with salsa, cream cheese, black beans, and diced green chiles over crushed tortilla chips, topped with fresh tomatoes, green onions, and shredded Mexican cheese blend. Baked until hot and bubbly, the casserole offers a creamy, mildly spicy filling with a crunchy base and cheesy top. It’s an ideal dish for a comforting family meal or casual dinner, garnished with sour cream and green onions to add freshness and creaminess.
Ingredients
- 13 ounces chicken diced, cooked
- 1 cup salsa
- 4 ounces cream cheese light
- 4 ounces green chiles canned diced
- 15 ounces black beans drained and rinsed
- 1 tomato diced
- 2 green onions sliced
- 2 cups Mexican cheese blend shredded
- 1 cup tortilla chips crushed
- sour cream for garnish
- green onion thinly sliced, for garnish
Instructions
- Preheat oven to 350 degrees F. Grease the inside of an 8-inch x 8-inch casserole dish. Set aside
- Place a large skillet over medium heat. Add the chicken, salsa, and cream cheese to the pan and stir until cheese is melted. Add the black beans and chiles and cook until everything is warmed through.
- Place a layer of crushed tortilla chips in the bottom of the casserole dish. Then top the chips with the chicken mixture and spread into an even layer. Top the casserole off with tomatoes, green onions, and cheese.
- Bake for 30 minutes until hot and bubbling. Remove from the oven and cut into 6 portions. We like to top with casserole with sour cream and green onions.
