Ingredients
- 1 bag frozen corn
- 2 tablespoon butter
- ½ cup mayonnaise
- ¼ cup sour cream
- 2 teaspoon elote seasoning or ½ teaspoon each chili powder, cumin, smoked paprika, garlic powder, salt
- Cholula hot sauce to taste
- ½ cup crumbled cotija cheese or feta cheese
- ¼ cup chopped fresh cilantro
- 1 lime
- jalapeño slices optional
Instructions
- Preheat the oven to 400°F.
- Toss the corn with the 2 tablespoon melted butter in a bowl.
- Spread the buttered corn on a baking sheet and bake for 15-20 minutes, stirring halfway, until lightly browned and roasted.
- In a separate bowl, mix mayonnaise, sour cream, 1 teaspoon of lime juice together.
- Transfer the roasted buttered corn to a serving dish and drizzle with the mayo-sour cream mixture.
- Sprinkle with the elote seasoning and Cholula hot sauce.
- Top with crumbled cotija cheese, jalapeno slices and chopped cilantro.
- Garnish with lime wedges.
- Serve warm with extra lime on the side.
