Ingredients

  • 1 bag frozen corn
  • 2 tablespoon butter
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 2 teaspoon elote seasoning or ½ teaspoon each chili powder, cumin, smoked paprika, garlic powder, salt
  • Cholula hot sauce to taste
  • ½ cup crumbled cotija cheese or feta cheese
  • ¼ cup chopped fresh cilantro
  • 1 lime
  • jalapeño slices optional

Instructions

  1. Preheat the oven to 400°F.
  2. Toss the corn with the 2 tablespoon melted butter in a bowl.
  3. Spread the buttered corn on a baking sheet and bake for 15-20 minutes, stirring halfway, until lightly browned and roasted.
  4. In a separate bowl, mix mayonnaise, sour cream, 1 teaspoon of lime juice together.
  5. Transfer the roasted buttered corn to a serving dish and drizzle with the mayo-sour cream mixture.
  6. Sprinkle with the elote seasoning and Cholula hot sauce.
  7. Top with crumbled cotija cheese, jalapeno slices and chopped cilantro.
  8. Garnish with lime wedges.
  9. Serve warm with extra lime on the side.
