Mexican Corn Salad
From ingredients to enjoyment, this recipe makes it easy to create something wonderful.
Ingredients
For salad:
- 4 corn on the cob large, grilled
- 5 radishes small, cut into thin slices and halved
- 1 avocado small, ripe
- 1/4 cup cilantro chopped
- 1/4 cup onion small diced, red variety
- 1/4 cup cotija cheese crumbled
For dressing:
- 1/2 cup mayonnaise
- 1 lime juiced
- 1 tablespoon chipotle sauce
- 1/2 teaspoon paprika
- 1/2 teaspoon chili powder
Instructions
For salad:
- Remove kernels off of all ears of corn and place them in a large bowl.
- Add the radishes, avocado, cilantro, red onion, and Cotija cheese and toss to combine.
- Pour in the dressing and toss to combine.
- Taste and season with kosher salt and black pepper if needed.
- Serve and enjoy!
For dressing:
- In a small bowl add the mayonnaise, juice of 1 lime, chipotle sauce, paprika, and chili powder. Mix well until combined.
