Mexican Corn Salad

Ingredients

For salad:
  • 4 corn on the cob large, grilled
  • 5 radishes small, cut into thin slices and halved
  • 1 avocado small, ripe
  • 1/4 cup cilantro chopped
  • 1/4 cup onion small diced, red variety
  • 1/4 cup cotija cheese crumbled
For dressing:
  • 1/2 cup mayonnaise
  • 1 lime juiced
  • 1 tablespoon chipotle sauce
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chili powder

Instructions

For salad:
    Cup of Yum
  1. Remove kernels off of all ears of corn and place them in a large bowl.
  2. Add the radishes, avocado, cilantro, red onion, and Cotija cheese and toss to combine.
  3. Pour in the dressing and toss to combine.
  4. Taste and season with kosher salt and black pepper if needed.
  5. Serve and enjoy!
For dressing:
  1. In a small bowl add the mayonnaise, juice of 1 lime, chipotle sauce, paprika, and chili powder. Mix well until combined.
