Mexican Pizza
This Mexican Pizza is a copycat version of the Taco Bell pizza made with tortillas, refried beans, enchilada sauce, and cheese.

Ingredients
- 1 lb ground beef
- 1 (1 ounce) package taco seasoning
- 12 (6-inch) Fajita size tortillas
- 1 (16 ounce) can refried beans
- 1 (10 ounce) can Red Enchilada Sauce
- 1/2 /2 cup diced tomatoes
- 1½ cups Mexican shredded cheese
- 1/4 /4 cup sliced olives
- 1/4 /4 cup taco sauce
Optional Ingredients:
- sliced green onions, chopped cilantro, or sour cream
Instructions
- Brown beef in a large skillet. Add the taco seasoning, add water called for on the package, and cook according to the package instructions. Set aside.
- Preheat oven to 400℉ and lay six of the tortillas on a baking sheet.
- Place refried beans in a small bowl and heat in the microwave for 1 minute. Spread about 1/4 cup of the beans on each of the six tortillas. Top each bean layer with about 1/6th of the taco meat. Add the remaining six tortillas on top of the taco meat.
- Brush about 1-2 tablespoons of enchiladas sauce on top. Divide the tomatoes on top of each tortilla. Top with about 1/4 cup of cheese.
- Bake in the oven for 6-8 minutes or until cheese is bubbly. Remove from the oven, top with olives, and drizzle with taco sauce. Sprinkle with green onions or cilantro and add sour cream if desired. Serve immediately.
