Ingredients

  • flour tortilla 2 tortillas
  • refried beans ½ cup
  • ground beef cooked; ½ cup; or shredded chicken
  • salsa ½ cup
  • cheddar cheese shredded; ½ cup
  • mozzarella cheese shredded; ½ cup
  • green onion chopped; ¼ cup
  • black olive sliced; ¼ cup; optional
  • tomato diced; ¼ cup
  • sour cream ¼ cup; for serving
  • taco seasoning 1 tablespoon; optional; for extra flavor
  • olive oil 1 tablespoon; for brushing

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Tortillas: Brush both tortillas with olive oil on one side. Place them on the baking sheet, oiled side up.
  3. Assemble the First Layer: Spread a layer of refried beans evenly over one tortilla. Top with cooked ground beef or shredded chicken, salsa, and a mix of cheddar and mozzarella cheese.
  4. Layer the Second Tortilla: Place the second tortilla on top of the first one, pressing down gently. Brush the top tortilla with olive oil.
  5. Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the cheese is melted.
  6. Add Toppings: Remove from the oven and top with chopped green onions, diced tomatoes, sliced black olives (if using), and any other desired toppings.
  7. Slice and Serve: Cut the Mexican pizza into slices and serve with a dollop of sour cream on the side.
