Mexican Potatoes

Ingredients

  • 2 pounds potatoes halved or quartered, baby, yellow or red
  • 1/4 cup olive oil
  • 1 1/2 tablespoons chili powder
  • 2 teaspoons cumin ground
  • 1 1/4 teaspoons oregano dried
  • 1/2 teaspoon paprika
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon kosher salt
  • 1/3 cup cilantro chopped, fresh

Instructions

  1. Place potatoes in a pot, cover with water, add some salt, and bring to a boil. Cook for about 5 minutes until slightly soft. Drain and rinse with cold water to stop cooking.
  2. In a large bowl, combine olive oil, chili powder, cumin, dried oregano, paprika, onion powder, garlic powder, and the salt. Add cooled potatoes and toss to coat evenly.
  3. Preheat oven to 400°F. Spread seasoned potatoes in a single layer on a baking sheet.
  4. Bake for 30 minutes until crispy and golden.
  5. Remove from oven and sprinkle with fresh chopped cilantro before serving.
