Mexican Quinoa Bowls

Ingredients

  • 2 cloves garlic minced
  • 2 jalapeños seeded and finely chopped
  • 1 cup uncooked quinoa rinsed well and drained
  • 1 ¼ cups vegetable or chicken broth
  • 1 can 1 ½ cups black beans, rinsed and drained
  • 1 14.5 oz can diced tomatoes (with juice)
  • ¾ cup corn
  • ½ teaspoon kosher salt
  • ¼ cup chopped fresh cilantro optional
  • 1 quarter of a lime juiced
  • To serve: salsa sour cream/Greek yogurt, shredded cheese, tortilla chips, and avocado
