Ingredients
- 2 cloves garlic minced
- 2 jalapeños seeded and finely chopped
- 1 cup uncooked quinoa rinsed well and drained
- 1 ¼ cups vegetable or chicken broth
- 1 can 1 ½ cups black beans, rinsed and drained
- 1 14.5 oz can diced tomatoes (with juice)
- ¾ cup corn
- ½ teaspoon kosher salt
- ¼ cup chopped fresh cilantro optional
- 1 quarter of a lime juiced
- To serve: salsa sour cream/Greek yogurt, shredded cheese, tortilla chips, and avocado
