Mexican Refried Beans

Mexican Refried Beans are an easy homemade refried bean recipe using pinto beans, green chilies, cheese and Mexican spices. Ready in just 15 minutes!

Ingredients

  • 2 15- ounce cans Luck’s Pinto Beans , undrained
  • 1 tablespoon vegetable oil
  • 3 garlic cloves , minced
  • 1 teaspoon cumin
  • 1 teaspoon cayenne pepper
  • 4.5 ounces canned green chilies , drained
  • ¾ cup cheddar cheese , shredded

Instructions

  1. Heat vegetable oil in a heavy bottom sauce pan. Add minced garlic, cumin and cayenne pepper. Sauté for 1-2 minutes or until fragrant. 
  2. Add both cans of Luck’s Pinto Beans, heat for 3-4 minutes. 
  3. Using a potato masher or large fork, mash beans well until desired consistency. 
  4. Fold in green chilies and shredded cheddar cheese. 
  5. Serve immediately.
