Mexican Rompope

Ingredients

  • 8 cups whole milk or sub plant-based milk
  • ⅛ teaspoon baking soda
  • ¾-1 cup cane sugar
  • 1 ceylon cinnamon stick
  • 2 whole cloves
  • ⅛ teaspoon ground nutmeg
  • 1/16 teaspoon salt (just a pinch)
  • 8 egg yolks
  • 1 teaspoon vanilla extract
  • Rum or Brandy (Optional)

Instructions

  1. Add milk and baking soda to a large pot.
  2. Mix on medium heat and bring to a simmer.
  3. Once simmering, mix in ¾ cup of sugar, cinnamon stick, cloves, ground nutmeg and salt.
  4. Lower heat to medium low and simmer for 20 minutes. Use a wooden spoon to mix occasionally to keep the milk from sticking to the bottom of the pan.
  5. Set aside for 20 minutes to cool.
  6. In a large bowl, whisk egg yolks.
  7. Gradually whisk the egg yolks into the warm milk mixture, a little at a time, to temper the eggs.
  8. Return the mixture to the stove and cook over very low heat for 15 minutes, stirring constantly with a whisk or wooden spoon, until the mixture thickens slightly.
  9. Strain the mixture through a fine-mesh sieve into a bowl.
  10. Mix in vanilla.
  11. Cover and refrigerate for at least 2 hours, or until chilled.
  12. If desired, add your desired amount of rum or brandy to each serving once chilled.

Notes

  • Rompope is typically served chilled or at room temperature in clear glasses. However, you can choose to not chill it and serve it warm if you'd like.
