Mexican Shrimp Cocktail

Mexican shrimp cocktail is filled with fresh vegetables, a homemade tangy tomato sauce, and perfectly cooked shrimp! This is the ultimate poolside treat.

Ingredients

  • 1 pound Shrimp peeled, and deveined, cooked
  • 2 medium Roma tomato diced
  • 1 medium English cucumber chopped into 1/4" size cubes
  • 1/2 cup celery sliced
  • 1/4 cup red onion diced
  • 1/4 cup cilantro chopped, fresh
  • 1 medium avocado diced
  • 1/2-1 medium jalapeño finely diced
  • 2 teaspoons garlic about 2 cloves, minced
  • 2 cups tomato juice
  • 1/2 cup ketchup
  • 1/4 cup lime juice about 2 limes
  • 2 tablespoons hot sauce r to taste
  • 1 tablespoon horseradish prepared
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Instructions

  1. Dice shrimp into small bite-sized peices and place in a large mixing bowl.
  2. Chop tomatoes, cucumber, celery, onion, cilantro and jalapeno. Add into the bowl with the shrimp. Add in finely minced garlic.
  3. In a separate mixing bowl, make the juice by adding in tomato juice, ketchup, lime juice, hot sauce, prepared horseradish, pepper and salt. Stir until well combined.
  4. Pour the sauce mixture over the shrimp and vegetables. Refrigerate until ready to serve. Add in diced avocados just before serving. Ladle into a fancy cup or individual serving bowls and enjoy!
