Mexican Shrimp Cocktail
Mexican Shrimp Cocktail features cooked shrimp combined with a tomato-based sauce infused with fresh tomatoes, red onion, cucumber, celery, cilantro, garlic, jalapeño, lime juice, and spices. Avocado chunks add creaminess and it is served chilled with tortilla chips. The mixture is flavorful with a balance of freshness, mild heat, and seafood taste.
Ingredients
- 1 lb. Shrimp peel and deveined, cooked
- 1 ½ cup tomatoes chopped, ripe
- ¼ cup ketchup
- 8 oz tomato sauce can
- 1 cup red onion finely chopped
- 1 cup cucumber peeled and diced
- 1-2 celery finely chopped, stalks
- ½ cup cilantro chopped
- 1 clove garlic minced
- 1 jalapeño seeds removed and finely chopped, optional
- lime juice from 1
- 2 teaspoons hot sauce like Cholula or Tapatio, Mexican style
- 1 teaspoon black pepper ground
- ¼ teaspoon salt sea salt
- 2 avocado chopped into chunks
- tortilla chips for serving
Instructions
- In a large bowl combine tomatoes, ketchup, tomato sauce, red onion, cucumber, celery, cilantro, garlic, jalapeño, lime juice, pepper and salt. Taste and add extra seasoning if needed.
- Cover, and refrigerate 2 to 3 hours to let the flavor build and chill the sauce. Add shrimp and avocado chunks right before serving.
- Serve in a large bowl or in small cocktail glasses with a side of tortilla chips for dipping.
