Ingredients
- 1 pound Cooked and peeled shrimp
- ¼ cup minced red onion
- ½ cup tomatoes Seeded and diced
- 1 avocado peeled, seeded and diced
- ¼ cup minced cilantro
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- salt and pepper to taste
Instructions
- Place all ingredients in a bowl and stir gently until combined. (1 pound Cooked and peeled shrimp, ¼ cup Minced red onion, ½ cup Tomatoes, 1 Avocado, ¼ cup Minced cilantro, 2 tablespoons Lime juice, 1 tablespoon Olive Oil, and salt and pepper to taste).
- Spoon into glasses and serve immediately, or store covered in the refrigerator for up to 2 hours.

Notes
- You can buy cocktail shrimp from the grocery store if you do not want to lightly cook the shrimp at home.
- Feel free to add diced jalapeño for a spicy kick.
- Store any leftovers in the refrigerator for up to four days. The longer the cocktail sits, the more flavorful it gets.
- If storing in the fridge, you may want to wait to add the avocado until just before serving.
