Mexican Street Corn Chicken

Mexican Street Corn Chicken features boneless skinless chicken breasts topped with a creamy, tangy mixture of sweet corn, mayonnaise, sour cream, lime juice, and spices such as chili powder, cumin, smoked paprika, garlic powder, and optional cayenne pepper. The chicken is browned on the stove then baked with the corn mixture spread on top, finishing under heat to meld flavors. Crumbled cotija cheese and fresh cilantro garnish the dish.

Ingredients

  • 4 chicken breast boneless and skinless
Mexican street corn mixture:
  • 3 cups sweet corn if using canned drain first; if using frozen, thaw it first
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 tablespoon lime juice
  • 1 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper optional
For serving:
  • 1/2 cup cotija cheese crumbled
  • 1/4 cup cilantro chopped

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a large bowl, add the Mexican street corn mixture ingredients, and mix to combine.
  3. Pat dry the chicken and season it with salt and pepper.
  4. Place a nonstick skillet over medium heat and add a bit of oil. Brown the chicken on both sides, until nicely browned.
  5. In a casserole dish, arrange chicken breasts. Spread the corn mixture evenly over the top.
  6. Bake uncovered, for 30-40 minutes or until the chicken is cooked through and a meat thermometer inserted in the thickest part of the meat reads 165F.
  7. Then remove from the oven and garnish with crumbled cotija cheese and fresh chopped cilantro.

Notes

  • Pound chicken breasts thin to ensure even cooking and prevent drying.
  • Let chicken rest for at least five minutes after baking before slicing to retain juices.
  • Thin chicken breasts cook faster; slicing them in half horizontally can help.
  • Canned chicken breast can be used in a pinch but yields different texture and flavor.
  • Crumbled cotija cheese made fresh melts better than pre-packaged versions.
  • Begin checking chicken doneness around 30 minutes to avoid overcooking; pull at 165°F internal temperature.
