Mexican Street Corn Turkey Burgers

Mexican turkey burgers are covered in cotija cheese, guacamole and grilled Mexican street corn for a flavorful summer burger recipe!

Ingredients

  • 2 cobs of corn
  • ¼ cup sour cream
  • 2 tbsp lime juice
  • ½ tsp cayenne pepper
  • 1 tbsp fresh cilantro
  • 6 Jennie-O 1/3 lb. Seasoned Turkey Burgers
  • ½ cup cotija cheese
  • 6 hamburger buns
  • ½ cup guacamole

Instructions

  1. Grill the corn for 3-4 minutes per side over medium heat.
  2. Remove from the grill and use a sharp knife to remove the kernels from the cobs.
  3. Combine the kernels with the sour cream, lime juice, cayenne pepper and cilantro in a small pot, set aside.
  4. Place the turkey burgers on the grill over medium heat.
  5. Grill for 9-10 minutes per side.
  6. Top with the cotija cheese and grill for an additional 2-3 minutes.
  7. Place the hamburger buns on the grill for 2-3 minutes.
  8. While the burgers are grilling, place the pot of Mexican street corn on the stove over medium heat for 4-5 minutes.
  9. Remove the buns from the grill and spread the guacamole on the bottom buns, then top with the burgers, the corn mixture and top bun.
