Mezcal Mojito with Watermelon
An easy summer mojito with mezcal, muddled watermelon, mint, and lime.
Ingredients
- ½ cup watermelon chunks
- 1 watermelon for garnish, slice
- ½ cup mint plus more for garnish, fresh
- ½ lime (juiced)
- ½ oz simple syrup (or agave)
- 1 ½ oz mezcal (or tequila)
- 2 oz club soda (or more)
Instructions
- Add the mint and watermelon chunks to highball glass and muddle with a cocktail muddler until the watermelon is completely crushed into a juice.
- Next, add the lime juice, simply syrup, and mezcal.
- Fill the glass up to the top with ice and top with the club soda and stir well.
- Garnish with the watermelon slice and a mint sprig.
Notes
- If you are making a large batch in a pitcher or punch bowl, you can puree a watermelon in a blender to save time.
