Microwave Fried Rice Recipe
This microwave fried rice recipe is the perfect way to transform leftover rice into something special! Soft, fluffy, and ready in minutes -- it's a great easy side dish to make on busy evenings!
Ingredients
- 2 cups white rice leftover cooked rice
- 1/4 cup peas frozen
- 1/4 cup carrot diced
- 2 Tablespoons soy sauce
- 1 teaspoon sesame oil
- 1/4 teaspoon ground ginger
- 1/2 teaspoon garlic powder
- 1/2 teaspoon sugar
- 1 egg scrambled
Instructions
- Add rice to microwave safe bowl with peas and carrots. Add soy sauce, sesame oil, seasonings, and sugar to bowl and stir to mix.
- Make a small indentation or bowl in the middle of the rice. Pour scrambled egg into this indentation.
- Microwave for 5 minutes, covering with a microwave-safe lid. Leave the lid slightly cracked so some steam can escape during cooking.
- Remove dish from microwave, taking care, as the dish may be hot. Stir everything together, re-cover, and allow to steam on counter for 1 minute.
