Ingredients

  • 2 cups white rice leftover cooked rice
  • 1/4 cup peas frozen
  • 1/4 cup carrot diced
  • 2 Tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sugar
  • 1 egg scrambled

Instructions

  1. Add rice to microwave safe bowl with peas and carrots. Add soy sauce, sesame oil, seasonings, and sugar to bowl and stir to mix.
  2. Make a small indentation or bowl in the middle of the rice. Pour scrambled egg into this indentation.
  3. Microwave for 5 minutes, covering with a microwave-safe lid. Leave the lid slightly cracked so some steam can escape during cooking.
  4. Remove dish from microwave, taking care, as the dish may be hot. Stir everything together, re-cover, and allow to steam on counter for 1 minute.
