Microwave Scrambled Eggs

With only 3 ingredients and less than a 5 minute cook time, these Microwave Scrambled Eggs will be a go-to breakfast dish any day of the week!

Ingredients

  • 2 eggs
  • 1 ½ teaspoons milk
  • 2 teaspoons butter
  • salt and black pepper

Instructions

    Cup of Yum
  1. Whisk eggs, milk, butter, salt, & pepper until well combined.
  2. Spray a small bowl with cooking spray and add egg mixture.
  3. Cover with plastic wrap or a small plate.
  4. Microwave at 70% power for about 45 seconds. Uncover and cook an additional 35-45 seconds stirring frequently until almost cooked through, eggs should be glossy.
  5. Remove from the microwave and let rest 30 seconds covered, add cheese if desired.

Notes

  • These directions are for a 1000 watt microwave, your microwave may vary. Check the eggs early to ensure they don't overcook. Do not overcook the eggs. They will look slightly undercooked but as they rest, they will continue cooking.
