Microwave Sweet Potato Cubes

Introducing you to the fastest way to cook sweet potatoes using the microwave. Microwave sweet potato cubes are so easy to prep, taste amazing and make mealtimes even quicker.

Ingredients

  • 2 medium sweet potatoes
  • 2 Tsp Coriander
  • 2 Tsp sweet paprika
  • salt & pepper

Instructions

    Cup of Yum
  1. Place one tablespoon of water in the bottom of your steamer basket.
  2. Peel and then dice your sweet potatoes into cubes. Then add to the steamer basket.
  3. Add your seasonings and mix with your hands for an even coating.
  4. Place the lid on the steamer and then place in the microwave.
  5. Microwave for 5 minutes.
  6. Remove the lid, allow the steam to release, shake the sweet potatoes and do a fork test to see how much longer they need to cook. We cooked ours for a further 3 minutes.
  7. When the microwave beeps, allow the steam to release and do a fork test to make sure the sweet potato cubes are fork tender. Then transfer to a serving dish.

Notes

  • Steam – Note there is a lot of steam, so allow the steam to go before transferring into a dish.
