Million Dollar Chicken Casserole

This creamy Million Dollar Chicken Casserole is a comfort food classic that is super easy to make! A great way to use up leftover chicken, you’ll have dinner on the table fast.

Ingredients

  • 4 cups cooked chicken see notes
  • ½ cup cooked bacon crumbled (see notes)
  • 4 ounces cream cheese
  • ½ cup sour cream
  • 10.5 ounces condensed cream of chicken soup
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • 1 cup cottage cheese
Topping
  • 1 cup mozzarella cheese grated
  • 25-30 Ritz crackers you’ll need most of one standard 126g sleeve
  • 3 tablespoons butter melted

Instructions

Get prepped

  1. If using fresh chicken, cook the chicken, cut into cubes or shred. Cook and crumble the bacon.
  2. Soften the cream cheese (leave out at room temp for 15 minutes). Melt the butter.
  3. Measure out the seasonings.
Make the cracker topping
  1. Add the crackers to a zip lock bag, and use a rolling pin to crush the crackers until they are small but still chunky. Add cracker crumbles to small bowl, mix the melted butter in.
Make the sauce
  1. Add the softened cream cheese, sour cream, cream of chicken soup and seasonings to the bowl of a stand mixer, or a large bowl (and grab your hand mixer).
  2. Mix until well combined.
  3. Fold in the cottage cheese, cooked chicken and crumbled bacon.
Assemble and bake
  1. Preheat the oven to 350°F
  2. Add the chicken and sauce mixture to a 8x8 casserole dish and spread out evenly.
  3. Sprinkle the top with the grated mozzarella, add the cracker topping over the mozzarella.
  4. Bake for 30-40 minutes until heated through and the sides are bubbling.
Serve
  1. Remove from the oven and let cool for 5-8 minutes before serving.
  2. Garnish with sliced green onions, if you’d like.

Notes

  • This will serve 6 as an entree with sides.
  • If this is the only thing served, it will serve 4
  • Chicken: If starting with raw chicken, you’ll need 2-3 small chicken breasts. See my recipe for Oven Baked Chicken Breasts for instructions (leave off the seasonings, aside from salt and pepper). If using leftover chicken, you’ll need about 4 cups.Bacon: If starting with fresh bacon, you’ll need around 6 slices. You can use packaged bacon bits if you prefer.
