Minatamis na Kamote

Japanese sweet potato casserole is easy to make in the oven and so delicious. Creamy, tender and smothered in a citrusy sweet syrup, this minatamis na kamote is a tasty and filling dessert or snack.

Ingredients

  • 2 pounds Japanese sweet potato about 4 large pieces, peeled and cut into 2-inch cubes
  • 2 tablespoons butter cubed
  • ½ cup brown sugar
  • ¼ cup orange juice

Instructions

  1. Preheat oven to 375 F.
  2. In a baking dish, arrange sweet potatoes in a single layer.
  3. Sprinkle with brown sugar and dot with butter.
  4. Drizzle with orange juice.
  5. Cover the baking dish tightly with foil and bake in the oven for about 40 to 50 minutes or until tender.
  6. Remove from oven and gently toss to coat with glaze. Serve hot or cold.

Notes

  • Cut the kamote in equal sizes to ensure they cook at the same rate. Place them immediately in a bowl of cold water as you cut them to keep them from turning black from oxidation.
  • Wrap the pan tightly with aluminum foil to keep in the heat.
  • No need to stir during baking!
