Mini Caprese Salads
Mini Caprese Salads combine bite-sized mozzarella, cherry tomatoes, and black olives tossed with a fresh dressing of scallion, garlic, basil, cider vinegar, and olive oil. The individual components retain their texture, creating a refreshing mix of creamy, juicy, and briny flavors. These salads can be served immediately or marinated for up to 24 hours, making them suitable as appetizers or light sides.
Ingredients
- 8 ounces mozzarella small mozzarella rounds, pearls
- 1 pint cherry tomatoes cut in half
- 4 ounces black olives small, cut in half
- 1 scallion finely chopped
- 1 garlic large clove, minced
- 2 basil leaves large, cut chiffonade, plus some small whole leaves for garnish
- 1/2 teaspoon salt
- 2 tablespoons cider vinegar
- 3 tablespoons olive oil
Instructions
- Assemble your ingredients.
- Mix the mozzarella pearls, tomatoes and olives in a large bowl, set aside.
- In another smaller bowl, add the scallions, garlic, chopped basil, salt and vinegar, mix together.
- Add the olive oil and whisk together till well combined.
- Add to the tomato mozzarella mixture and toss.
- This can be served immediately or marinated for up to 24 hours. Serve in mini tasting glasses garnished with whole basil leaves.
