Mini Caprese Skewers

My Mini Caprese Skewers are a perfectly delicious appetizer! You'll simply skewer marinated mozzarella, tomatoes, and basil, and you're done.

Ingredients

  • 2 tablespoons chopped parsley
  • 2 tablespoons chopped chives
  • 2 tablespoons olive oil extra virgin
  • salt and pepper to taste
  • 20 bocconcini (mini mozzarella balls) or make pieces from a large mozzarella ball
  • 20 cherry tomatoes
  • 20 basil leaves

Instructions

  1. In a small bowl, combine the parsley, chives, olive oil, salt, and pepper.
  2. Add the mozzarella and toss well to coat. Cover and set aside for at least one hour.
  3. Cut the cherry tomatoes in half. Tear the basil leaves in half.
  4. Using toothpicks or short wooden skewers, place one half of a tomato, a piece of basil leaf, a mozzarella ball, and finish with the second tomato half.
  5. Serve at room temperature.

Notes

  • May be made up to 24 hours in advance. Be sure to remove from the refrigerator at least one hour before serving.
