Mini Cheese and Spinach Tartlets

These bacon, cheese and spinach tartlets are the perfect bite-size appetizer for any gathering. Made with ease, they feature a delicious blend of feta and cream cheese nestled on a flaky puff pastry crust.

Ingredients

  • 1 roll puff pastry thawed
  • 2 cups fresh spinach shredded
  • 8 oz cream cheese room temperature
  • ½ cup Parmesan Cheese
  • ½ cup feta cheese
  • ½ cup bacon bits
  • ½ tsp black pepper
  • ½ tsp garlic powder

Instructions

  1. Preheat the oven to 400° F. Grease your mini muffin pan and set it aside.
  2. In a medium bowl, combine the cream cheese, parmesan cheese, feta cheese, bacon bits, garlic powder, and black pepper.
  3. Mix until well incorporated.
  4. Add in the shredded spinach and mix until it's evenly dispersed in the cheese mixture. Set aside.
  5. Unfold the puff pastry on a clean work surface and cut it along the fold marks to make thirds. Cut each third in half lengthwise, then cut each long piece of puff pastry into 1-inch squares, for a total of 24 square pieces.
  6. Place one puff pastry square cutout in each mini muffin cup.
  7. Fill each cup with a spoonful of the spinach and cheese mixture.
  8. Pop the muffin pan into the preheated oven and bake for 20-25 minutes or until the tartlets are golden brown.
  9. Once baked, use a butter knife to loosen the edges of the tartlets and pop them out of the muffin cups.
  10. Serve the spinach tartlets warm. Enjoy!

Notes

  • Prep Work: Before you begin, ensure that your cream cheese is at room temperature. This makes it easier to mix and ensures a smooth, creamy texture in your filling. 
  • Divide Spinach Mixture Evenly: Don't overfill the tartlet cups with the spinach and cheese mixture. Distribute the filling evenly for a uniform look.
  • Monitor Baking Time: Keep an eye on your tartlets as they bake. They should be light golden brown when done. Overbaking can result in dry tartlets, so aim for just the right amount of color.
